Executive Chef Josh Miller

Born in Hilo, Hawaii, Josh began his culinary path early, working at world-class resorts on the Big Island of Hawaii during high school. Cooking then took him to Minneapolis, where he opened Cosmos in the Le Meridien Hotel. During his time there, he represented Cosmos at the prestigious James Beard House in NYC and participated in Food and Wine Magazine’s Top 10 Best Chefs in the country – Kona, Hawaii under Chef Seth Bixby Daugherty. In 2007, Josh opened The Red Stag Supper Club – the first L.E.E.D certified restaurant in the Midwest. The menu boasted only local and sustainable “Farm to Table” principles and was the first of its kind in the Midwest. In 2008, Josh was hired as Executive Chef of Manny’s Steakhouse, Prohibition Craft Cocktail Lounge, and The W Hotel. During his tenure, Manny’s received awards for City Pages “Restaurant of the Year”, a James Beard nomination for service, and was named one of the Top 10 Steakhouses in the world by Men’s Journal. He also represented Minnesota at “Taste of the Nation” for Super Bowl XLVIII, NYC. In 2015, Josh took a position as Culinary Director for Madison Restaurant Group. He grew the restaurant to 7 different concepts and helped build its flagship restaurant “The Handsome Hog” which received national recognition. In 2018, Fox Restaurant Concepts hired Josh to run their flagship concept, The Henry, in Beverly Hills, CA. In 2019, he joined ArcLight Cinemas as Executive Chef – overseeing 16 cinemas across Southern California, Chicago, D.C and soon to be Boston. Josh enjoys traveling and contributes his time to local charitable events like Share our Strength, Real Food Initiatives, Surfrider Foundation, and the American Liver Foundation.
